Tuna Caper and Fresh Tomato Linguine

Ingredients

  1. 12 oz (340 g) linguine
  2. 2 cups (500 mL) halved cherry tomatoes
  3. 1/3 cup (75 mL) sliced black olives, drained
  4. 1/4 cup (60 mL) chopped parsley
  5. 3 tbsp (45 mL) olive oil
  6. 2 tbsp (30 mL) capers, drained
  7. 1 clove garlic, minced
  8. 1/4 tsp (1 mL) salt
  9. Pinch hot pepper flakes (optional)
  10. 1 can (170 g) Solid White Albacore Tuna in Water, drained

Method

  1. Cook linguine according to package directions; reserving 1/3 cup (75 mL) pasta water. 
  2. Meanwhile, stir tomatoes with black olives, parsley, oil, capers, garlic, salt and hot pepper flakes (if using) until combined. Stir in tuna then toss with pasta and pasta water.
