Herbed Steak Sandwiches

  1. 3 tablespoons Compliments Butter, softened
  2. 2 tablespoons Compliments Organics Chives, minced
  3. 1 loaf (1 pound) Artisan Pugliese Bread
  4. 3/4 to 1 pound leftover cooked London Broil, thinly sliced (see London Broil with Balsamic-Brown Sugar Glaze Recipe)
  5. 4 ounces shredded Monterey Jack cheese


  1. Preheat broiler to high. 
  2. In a small bowl, mix together the butter and 1 tablespoon chives until well blended. 
  3. Cut bread crosswise into 4 equal sections. Cut each section in half horizontally. 
  4. Spread butter mixture evenly over cut sides of bread. 
  5. Place bread pieces, buttered sides up, on a baking sheet. 
  6. Broil 4-6 inches from heat until lightly toasted, 3-4 minutes. Watch carefully to avoid burning.
  7. Remove the pieces of bread from the top of the loaf from baking sheet and set them aside. 
  8. On remaining bottom pieces, pile equal amounts of meat and cheese, arranging them to cover bread completely. 
  9. Return to broiler and broil until cheese is bubbling and lightly browned, 3-4 more minutes.
  10. Transfer bread with meat to serving plates. 
  11. Sprinkle equally with remaining chives. 
  12. Place bread tops over meat and serve immediately.
