Roasted Acorn Squash Slices

  1. 1 large acorn squash (approx. 2 1/4 lb/1.125 kg)
  2. 3 tbsp (45 mL) olive oil
  3. 1/4 tsp (1 mL) ground allspice
  4. 1/2 tsp (2 mL) ground cinnamon
  5. 1/4 tsp (1 mL) ground nutmeg
  6. salt and pepper to taste


  1. Preheat oven to 375° F (190°C). Line large baking sheet with parchment paper. Cut squash in half; scoop out and discard seeds. Slice flesh into 1/2-in. (1-cm) thick slices. Place in bowl; toss with oil, cinnamon, allspice, nutmeg, salt and pepper.
  2. Arrange squash slices in single layer on lined baking sheet. Roast 30 to 35 min., until tender and golden brown on edges.
