Rana Mushroom Ravioli with Smoked Meat & Blue Cheese Sauce

Bring a large pot of salted water to a boil for cooking the pasta later.
Meanwhile, heat olive oil in a large saucepan over medium-high heat. Add the mushrooms and smoked meat; sauté until golden, 5 to 8 min. Stir in the garlic, cook for 1 min. Mix in the alfredo sauce, 3/4 cup (175 mL) crumbled blue cheese (reserve rest for garnish) and 3/4 cup (175 mL) water (or vegetable broth, if desired). Bring to a simmer; reduce heat to low. Cover and cook on a low simmer for 10 min., stirring occasionally.
Meanwhile, cook pasta according to package directions. (If the sauce needs loosening, mix in a splash of the pasta water or more plain water.) Drain ravioli. Gently stir ravioli and half the arugula in the sauce to coat.
Plate pasta mixture, spooning the blue cheese sauce on top. Garnish with the crushed croutons, remaining arugula and reserved blue cheese. Serve and enjoy!
