Potatoes & Eggs Skillet Breakfast

Ingredients

  1. 1 tbsp (15 mL) butter
  2. 2 medium red potatoes, cubed, boiled till firm-tender, drained and cooled
  3. 1 cup (250 mL) diced ham
  4. 1/4 cup (60 mL) finely diced red pepper
  5. 8 eggs
  6. 1/4 cup (60 mL) 5% light cream
  7. 1 cup (250 mL) grated Cheddar cheese
  8. 2 green onions, finely chopped
  9. salt and pepper to taste

Method

  1. Melt butter in large non-stick skillet over medium-high heat. Stir in potatoes, ham and red pepper; cook 3 to 4 min. until heated through.
  2. Meanwhile, in bowl, fork-beat eggs with cream. Add egg mixture, cheese, green onion, salt and pepper to skillet. As eggs begin to set, gently move a heatproof spatula across the bottom and sides of the skillet until the egg mixture forms large, moist curds. Serve immediately.
