chopped parsley
60 mL

Method

Step 1

Using a spice or coffee grinder, pulse half the package of dried porcini mushrooms into a fine powder; set aside. Soak the remaining dried porcini mushrooms in 2 cups (500 mL) just-boiled water for 20 min.

Step 2

Meanwhile, coarsely chop the cremini mushrooms. Next, melt the butter in a large saucepan over medium heat. Add the cremini mushrooms to the pot; stir and cook to brown, about 8 min. Mix in the celery, onion, garlic, paprika, salt and pepper; cook until the vegetables soften, about 3 min.

Step 3

Strain the soaked porcini mushrooms, reserving the mushroom soaking liquid. (Tip: Discard the bottom of the liquid as it may contain sediment.) Set aside the soaking liquid. Coarsely chop the rehydrated porcini mushrooms; set aside.

Step 4

Stir the reserved dried porcini mushroom powder into the vegetable mixture in the saucepan; cook 1 min. Stir in the reserved mushroom soaking liquid and the vegetable broth. Cover and bring to a simmer, then stir in the barley and chopped rehydrated porcini mushrooms. Loosely cover and keep to a gentle simmer, stirring occasionally, until the barley is tender and the soup has slightly thickened, about 30 min.

Step 5

Turn off heat. Stir in the parsley and lemon juice. (Tip: Mix in a little hot water to loosen, if a thinner soup is desired.) Taste and adjust seasonings, if needed. Serve in soup bowls.
