Ingredients

  • 3 tbsp (45 mL) olive oil
  • 1 tbsp (15 mL) anchovy paste
  • 1 clove garlic, minced
  • 1/2 tsp (2 mL) lemon zest
  • 2 tbsp (30 mL) lemon juice
  • 1/4 tsp (1 mL) salt
  • 1 green onion, finely sliced
  • 2 tbsp (30 mL) chopped capers
  • 2 tbsp (30 mL) chopped toasted pumpkin seeds
  • 1 pkg (142 g) mixed greens such as baby spinach and baby kale (about 4 cups/1 L)

Method

  1. In large bowl, mix together oil, anchovy paste, garlic, lemon zest, lemon juice and salt. 
  2. Stir in green onion, capers and pumpkin seeds. Add mixed greens; toss to coat. Serve as a topper on your favourite pizza.

 

Tips:  

- Omit anchovy paste and substitute with olive tapenade.

- Serve on top of sandwiches, pasta or burgers.
