Ingredients

  • 1 cup (250 mL) peeled, diced fresh peach (1 large peach)
  • 1 cup (250 mL) blueberries
  • 1 small shallot, finely diced
  • 1/2 jalapeno pepper, seeded and finely diced
  • 2 tbsp (30 mL) finely chopped fresh basil
  • 1 tsp ( 5 mL) finely chopped fresh mint
  • 1 tsp (5 mL) lime zest
  • 2 tbsp (30 mL) lime juice
  • 2 tsp (10 mL) Sensations by Compliments 100% Pure Canadian Maple Syrup
  • 1 tsp (5 mL) fresh minced ginger
  • 1/2 tsp (2 mL) salt

Method

  1. Stir together peach, blueberries, shallot, jalapeno, basil, mint, lime zest, lime juice, maple syrup, ginger and salt. Let stand 10 min. before serving with grilled pork or chicken, tortilla chips or baked brie.
