Mushroom, Onion & Gruyère Soup

  1. 1 tbsp olive oil
  2. 1 onion, diced
  3. 1 lb sliced mixed mushrooms
  4. 4 cups vegetable broth
  5. 2 cups milk
  6. 1 tsp chopped fresh thyme leaves
  7. 1 1/2 cups grated Gruyère cheese, to serve


  1. Heat oil in large saucepan over medium heat. Add onion and mushrooms. Cook until onion turns golden and no liquid remains, about 8 min.
  2. Add broth and milk. Bring to a boil then reduce to a simmer. Add thyme and cook 5 min. Remove soup from heat and ladle into bowls. Top each bowl with cheese to serve.
