Montreal Smoked Meat Crostini

Ingredients

  1. 16 baguette slices, each about 1/2-in. (1-cm)
  2. 3 tbsp (45 mL) olive oil
  3. 1 cup (250 mL) finely chopped sweet pickles
  4. 1/4 cup (60 mL) finely chopped sweet onion
  5. 2 tbsp (30 mL) finely chopped fresh parsley
  6. 2 tbsp (30 mL) mustard seeds
  7. 2 tbsp (30 mL) apple cider vinegar
  8. 4 tsp (20 mL) Dijon mustard
  9. 8 thin slices Montreal smoked meat or corned beef, cut in half

Method

  1. Preheat broiler to high. To make a relish, in bowl, stir pickles with onion, parsley, mustard seeds and vinegar. Let stand 15 min. for flavours to marinate.
  2. Brush baguette slices with olive oil. Place on large baking sheet. Broil 1 to 2 min. per side or until toasted. Spread mustard on each baguette slice. Top with slice of meat. Garnish with 1/2 tsp (2 mL) of pickle mixture (there will be some leftover for another use).
