Ingredients

thinly sliced English cucumbers

prepared horseradish

whole-wheat bread

Store-Made Traditional Meatloaf, cooked according to package directions

Method

Step 1
In bowl, toss cucumber slices with lemon juice, olive oil, mint and salt. Fill lettuce cups.
Step 2
Mix mustard with horseradish. Spread scant 1 tbsp (15 mL) mixture on 4 bread slices. Cut meatloaf portion into 4 slices. Sandwich meatloaf, tomato and cheese between slices of bread.
Step 3
Preheat panini press according to manufacturer’s instructions. Cook sandwiches 2 to 3 min. or until bread is toasted and cheese is melted. Serve with cucumber salad in lettuce cups.
