Jamaican-Style BBQ Chicken

Ingredients

  1. 1 cup (250 mL) Compliments Ginger Ale
  2. 2 tbsp (30 mL) finely chopped fresh thyme
  3. 2 tbsp (30 mL) canola oil
  4. 2 tbsp (30 mL) lime juice
  5. 2 tbsp (30 mL) soy sauce
  6. 2 cloves garlic, minced
  7. 1/2 tsp (2 mL) each salt, pepper, ground cinnamon and allspice
  8. 3 lb (1.5 kg) bone-in, skin-on chicken pieces (breast, thigh or leg)
  9. 1/2 cup (125 mL) Sensations by Compliments Spirited Mickie Dark & Stormy Rum-Spice BBQ sauce

Method

  1. In large bowl, stir together ginger ale, thyme, oil, lime juice, soy sauce, garlic, salt, pepper, cinnamon and allspice. Add chicken; turn to coat. Cover and marinate in fridge 1 to 4 hr.
  2. Cook chicken on grill preheated to medium, 20 to 25 min., or until thickest part of meat reaches 165°F (74°C) on an instant-read thermometer. Turn chicken pieces often. In last 2 min. of grilling, brush with Spirited Mickie Dark & Stormy Rum-Spice BBQ sauce.

Tips:
• Alternatively, bake chicken on parchment paper-lined baking sheets in preheated 400˚F (200˚C) oven for 20 min. Brush with barbecue sauce and bake another 8 to 10 min., or until thickest part of meat reaches 165°F (74°C) on an instant-read thermometer.
• Shred any leftover chicken, stirring in more barbecue sauce, to serve in buns.
