Ingredients

white vinegar

ripe avocado, peeled and pitted

lime juice

finely chopped fresh cilantro

slices sourdough bread, toasted
1/4 cup
finely crumbled feta cheese

Method

Step 1
Poach eggs in saucepan of simmering water with vinegar for about 4 minutes or until whites are firm but yolks are still soft. Lift out eggs using a slotted spoon; drain on paper towel.
Step 2
Meanwhile, in bowl, mash together avocado, lime juice, cilantro, parsley, chives and salt. Spread evenly over toasted bread slices.
Step 3
Top each one with an egg. Sprinkle with feta cheese.
