Step 1

Preheat oven to 160°C (325°F). Line a roasting pan with foil or parchment paper. Open the cans of pineapple and reserve ¼ cup (60 mL) of the juice. Drain and set aside the pineapple rings.

Step 2

Whisk together a huli-huli-style glaze with the reserved pineapple juice, ketchup, soya sauce, honey, cider vinegar, Worcestershire sauce, paprika, garlic powder, ginger powder, onion powder, black and cayenne peppers; set aside.

Step 3

Place ham in prepared roasting pan, flat cut-end down. Brush lightly with the glaze. Roast ham 20 min. per lb. (or about 3 hr.), brushing with the glaze every 20 min.

Step 4

About 30 min. prior to the end of cooking, thread maraschino cherries onto toothpicks. Remove ham from oven (but keep oven on) and secure pineapple rings all over the ham by pushing a toothpick and cherry into the centre of each pineapple ring. Return the ham to oven to finish cooking. After baking, remove ham from oven; let rest 10 min. Transfer to a serving platter. Remove pineapples and cherries, discarding toothpicks, and place in bowl to serve alongside the carved ham.
