(12 oz/375 g) Sliced Portabella Mushrooms
2 tsp
olive oil
10 mL
green onions
1/2 cup
125 mL
green olives & chives baguettes
8 slices
slices L’Abbaye St-Benoît St-Augustin Cheese


Step 1

Preheat the grill to medium-high and brush mushrooms lightly with olive oil. Grill for approx. 5 min. per side or until mushrooms are marked but still juicy. Meanwhile, place the whole green onions on the grill, turning so they brown on all sides; 5 to 6 min. total. Remove vegetables from the grill.

Step 2

Cut the roots off the green onions and cut the stalks into large pieces. In a chopper or blender, combine the onions with the mayonnaise and blend until uniform. Or finely chop the green onions by hand and mix with the mayonnaise until well combined.

Step 3

To assemble the sandwiches, cut the baguettes into quarters. Split the bread crosswise and spread the green onion mayonnaise on both halves. Place mushrooms and cheese on one half of each sandwich. Close the sandwiches. Serve immediately or wrap tightly and keep chilled until ready to serve.
