Ingredients

- Original Goat Cheese, softened
- 113 g
- 1/2 cup
- light cream cheese, softened
- 125 mL
- 3/4 cup
- finely diced mixed bell peppers
- 175 mL
- 1/4 cup
- finely chopped fresh chives
- 60 mL
- 1 tsp
- lemon zest
- 5 mL
- 1
- maple grilling plank, soaked in water for 2 hours
Method
- Step 1
- Preheat barbecue to medium. In a bowl, mix together goat cheese, cream cheese, 1/2 cup (125 mL) peppers, chives and lemon zest. Spread remaining peppers on a plate. Scoop cheese mixture onto a piece of plastic wrap, pull up sides and press cheese mixture into a ball. Remove plastic wrap and roll cheese ball in peppers, pressing gently so they stick to the cheese.
- Step 2
- Place cheese ball on maple plank. Set plank in centre of grill, close barbecue lid and cook for 5 to 8 min., checking every few minutes that cheese holds its shape as it warms through.
