Easy Black Bean Burritos

  1. 2 tbsp (30 mL) canola oil
  2. 2 peppers, diced (green or red)
  3. 1 onion, diced
  4. 2 tbsp (30 mL) taco seasoning
  5. 1 can (19 oz) no salt added black beans, drained and rinsed
  6. 1 cup (250 mL) diced tomatoes
  7. 4 Compliments 100% Whole Grain Whole Wheat Tortillas
  8. 1 1/3 cups (325 mL) Sensations by Compliments Triple Cheddar Shredded Cheese Blend
  9. 1/2 cup (125 mL) Compliments Guacamole (optional)
  10. 1/2 cup (125 mL) salsa (optional)
  11. 1/2 cup (125 mL) sour cream (optional)


  1. Heat oil in large skillet over medium heat. Add peppers, onion and taco seasoning; cook 5 min. until veggies soften. Stir in black beans, tomatoes and 1/4 cup (60 mL) water; cook about 10 min. until mixture is still moist but no excess liquid remains.
  2. Spread bean mixture onto tortillas, leaving 1-in. (2.5-cm) border. Top with cheese. Fold edge of tortilla over filling, fold in sides, roll up to enclose filling. Make 4 burritos. Serve with guacamole, salsa and sour cream, if desired.
Add rotisserie chicken, cooked ground beef or leftover quinoa for added protein.
For crisp burritos, brush tortillas lightly with oil. Place on heavy skillet or grill pan over medium heat; about 3 min. per side until golden.
