Ingredients

  • 5 cups (1.25 L) peeled and chopped dragon fruit (about two large)
  • 4 large strips lemon zest
  • 1/4 cup (60 mL) lemon juice
  • 1 cinnamon stick
  • 1 tbsp (15 mL) minced fresh ginger
  • 4 cardamom pods
  • 1/3 cup (75 mL) sugar

Method

  1. Combine dragon fruit, lemon zest, lemon juice, cinnamon stick, ginger and cardamom pods in saucepan set over medium-high heat; bring to a boil. Reduce to medium heat.
  2. Simmer 15 to 20 min., stirring frequently to prevent scorching, until liquid is syrupy. Discard whole spices and lemon zest. Stir in sugar; simmer 8 to 10 min. until thickened.
  3. Ladle compote into two 1-cup (250-mL) Mason jars and cool completely. Seal with lids and refrigerate 8 hr. until set. Enjoy immediately or store refrigerated up to 2 weeks. Decorate with festive ribbons or strings and tags.

Tip: Serve compote over ice cream, cakes and waffles. Also delicious served with roast pork or duck.

Makes: 2 jars (1 cup/250 mL each)
