Dijon mustard

honey

chopped fresh tarragon (optional)

green beans, steamed
500 g
1 tbsp
olive oil

Method

Step 1
Preheat oven 350°F (180°C). Set chicken in baking dish just large enough to fit the pieces in a single layer. Mix mustard with 3 tbsp (45 mL) lemon juice, tarragon (if using) and honey. Pour over chicken.
Step 2
Bake approx. 1 hr. or until chicken is cooked through and skin is golden. Remove chicken to platter. Skim fat from mustard sauce left in baking dish, if desired.
Step 3
Toss steamed green beans with remaining lemon juice and olive oil. Serve with chicken, drizzled with mustard sauce.
