- chicken thighs
- 1/2 cup
- Dijon mustard
- 125 mL
- 1/4 cup
- lemon juice, divided
- 60 mL
- 1 tbsp
- honey
- 15 mL
- 2 tsp
- chopped fresh tarragon (optional)
- 10 mL
- 1 lb
- green beans, steamed
- 500 g
- 1 tbsp
- olive oil
- 15 mL
Method
- Step 1
- Preheat oven 350°F (180°C). Set chicken in baking dish just large enough to fit the pieces in a single layer. Mix mustard with 3 tbsp (45 mL) lemon juice, tarragon (if using) and honey. Pour over chicken.
- Step 2
- Bake approx. 1 hr. or until chicken is cooked through and skin is golden. Remove chicken to platter. Skim fat from mustard sauce left in baking dish, if desired.
- Step 3
- Toss steamed green beans with remaining lemon juice and olive oil. Serve with chicken, drizzled with mustard sauce.
