Method
- Step 1
- In medium bowl, fork-beat eggs, then beat in milk. Stir in ham, cheese, salt and pepper.
- Step 2
- Melt the butter in large non-stick skillet over medium-low heat. Pour in egg mixture. As it begins to set, gently move a heatproof spatula across the bottom and sides of the skillet until the egg mixture forms large, moist curds. Sprinkle with chives and serve.
