Comté-Stuffed Hamburgers with Grilled Mushrooms & Sweet Potatoes
lean ground beef
egg, lightly beaten
each salt and pepper, divided
grated Comté or Swiss cheese, divided
1 pkg mixed mushrooms
unsalted butter, melted

Prick sweet potatoes all over with a fork. Microwave on HIGH 8 min., turning half-way through. Transfer to grill preheated to medium-high heat. Grill about 20 min., turning half-way, until soft.
Meanwhile, mix ground beef with onion, egg and ¼ tsp (1 mL) each salt and pepper in large bowl. Form into 8 patties ¼-in. (5-mm) thick. Place 4 patties on work surface and top each with ¼ cup (60 mL) of the cheese. in the centre. Place remaining 4 patties on top and pinch edges together to seal in cheese. Grill patties about 10 min. per side, or until meat is no longer pink and patties are browned.
Meanwhile, place a large sheet of foil on work surface. Arrange mushrooms in centre of foil. Drizzle with butter. Sprinkle with remaining ¼ tsp (1 mL) each salt and pepper. Fold together edges of foil to create sealed package. Place on grill 10 min. until mushrooms are tender.
Fill buns with patties topped with mushrooms. Serve burgers with grilled sweet potatoes on the side.
