Classic Mixed Bean Salad

Ingredients

  1. 1/3 cup (75 mL) olive oil
  2. 1/4 cup (60 mL) red wine vinegar
  3. 1 tsp (5 mL) dried oregano
  4. 1/2 tsp (2 mL) each salt and pepper
  5. 1 can (540 mL) Compliments Chick Peas, drained and rinsed
  6. 1 can (540 mL) Compliments Dark Red Kidney Beans, drained and rinsed
  7. 1 can (540 mL) Compliments Black Beans, drained and rinsed
  8. 2 cups (500 mL) chopped tomatoes
  9. 1 cup (250 mL) chopped jarred roasted red pepper
  10. 1/2 cup (125 mL) finely diced red onion
  11. 2 tbsp (30 mL) finely chopped chives

Method

  1. In large bowl, whisk together oil, vinegar, oregano, salt and pepper. Add chickpeas, kidney beans, black beans; toss to coat. Stir in tomatoes, red pepper, onion and chives.
Tip:
After rinsing beans, rinse them well to avoid watering down the dressing.
