Ingredients

2 tbsp
olive oil

1 ½ cups
Compliments Jasmine Rice (uncooked), rinsed and drained
375 mL
1/3 cup
minced shallots
75 mL
1 tbsp
minced fresh ginger

Compliments Chicken Broth
500 mL
½ tsp
salt
2 mL
½ tsp
ground black pepper
2 mL
½ cup
finely chopped cilantro
125 mL

lime, zested and juiced

Method

Step 1

Heat the oil in a medium saucepan over medium heat. Add the rice, shallots and ginger; stir and cook 1 to 2 min. until the shallots turn translucent. Stir in the broth, salt and pepper; bring to a boil then immediately reduce to a gentle simmer. Cover and cook until the rice has absorbed the liquid, 10 to 13 min.

Step 2

Remove from heat and let stand 5 min. Gently fluff the rice with a fork. Stir in the cilantro, lime zest and juice. Adjust seasonings to taste, if necessary, before serving.

Tips

Try this dish with Maple Chipotle Salmon sold in the Seafood Dept.
Swap vegetable broth for chicken broth.
