Carrot & Caraway Slaw

Ingredients

  1. 1 tbsp (15 mL) caraway seeds
  2. 4 large carrots, shredded
  3. 2 tbsp (30 mL) cider vinegar
  4. 1 tbsp (15 mL) olive oil
  5. 1 tsp (5 mL) honey
  6. 1/2 tsp (2 mL) salt

Method

  1. Toast caraway seeds in a dry skillet over medium heat, stir just until fragrant, about 2 min.
  2. In a bowl, mix together carrots, toasted caraway seeds, vinegar, olive oil, honey and salt.
Tip:
Aromatic caraway seeds lend a sweet, nutty flavour to vegetables.
