Blackberry Coconut Chia Parfait

Ingredients

  1. 2 cups (500 mL) blackberries
  2. 2 tbsp (30 mL) honey
  3. 1 1/2 cups (375 mL) coconut kefir or yogourt
  4. 2 bananas
  5. 1/4 cup (60 mL) chia seeds
  6. 1/3 cup (75 mL) toasted coconut

Method

  1. Toss blackberries with honey. Let stand 5 min. Meanwhile, puree kefir or yogourt with bananas and chia seeds in blender until smooth. 
  2. Layer blackberries, kefir/yogourt mixture and toasted coconut in four 1 cup (250 mL) glasses or jars. Cover with plastic or seal with a lid. Keep chilled. Serve within 12 hr. 
Tips:
Use frozen sliced banana for an icy parfait.
