Herbed Avocado Toast with Poached Egg

  1. 4 eggs
  2. 1 tbsp (15 mL) white vinegar
  3. 1 ripe avocado, peeled and pitted
  4. 2 tbsp (30 mL) lime juice
  5. 1 tbsp (15 mL) finely chopped fresh cilantro
  6. 1 tbsp (15 mL) finely chopped fresh parsley
  7. 2 tsp (10 mL) finely chopped fresh chives
  8. Pinch salt
  9. 4 slices sourdough bread, toasted
  10. 1/4 cup (60 mL) finely crumbled feta cheese


  1. Poach eggs in saucepan of simmering water with vinegar for about 4 minutes or until whites are firm but yolks are still soft. Lift out eggs using a slotted spoon; drain on paper towel.
  2. Meanwhile, in bowl, mash together avocado, lime juice, cilantro, parsley, chives and salt. Spread evenly over toasted bread slices.
  3. Top each one with an egg. Sprinkle with feta cheese.

Tip: Substitute lemon for lime juice if desired.

Tip: If you like, add bacon or ham to toast before topping with egg.
