Three-Ingredient Berry Ice Cream

Prep Time: 5 minutes
Total Time: 8 hours
Makes: 8

  1. 1½ cups 35% whipping cream
  2. 1 can sweetened condensed milk
  3. 1 cup roughly chopped mixed fresh berries (strawberries, raspberries, blackberries and/or blueberries)

  1. Using an electric mixer, beat cream on medium speed 3 to 5 min., or until stiff peaks form. Reduce speed to low and beat in sweetened condensed milk. Set aside.
  2. Purée half the berries in a food processor (or mash in bowl with fork). Add both puréed (or mashed) and remaining chopped berries to cream mixture; beat on low just until combined.
  3. Scrape mixture into a loaf pan and cover with plastic wrap, or seal in a plastic re-sealable container. Freeze about 8 hr., or until firm.
Use 1 cup (250 mL) frozen berries in place of fresh; thaw slightly before chopping or mashing.
