Pre-soak cedar plank and preheat barbecue according to package instructions.
In a small bowl, mix honey with lemon zest. Set aside
In another bowl, gently mix raspberries and almonds.
Place both wheels of cheese on prepared plank, spacing evenly.
Top each with half of the raspberry mixture. Drizzle about 1 tsp (5mL) of the honey mixture over the raspberries on each cheese wheel.
Place plank on barbecue grill and close lid. Cook for 15 to 20 minutes until cheese is golden brown and slightly puffed. Remove from grill placing plank on a heat proof serving dish. Drizzle remaining honey mixture over raspberries on each cheese wheel. Serve with your favourite crackers, sliced baguettes or pitas.
