Method
- Step 1
- Pre-soak cedar plank and preheat barbecue according to package instructions.
- Step 2
- In a small bowl, mix honey with lemon zest. Set aside
- Step 3
- In another bowl, gently mix raspberries and almonds.
- Step 4
- Place both wheels of cheese on prepared plank, spacing evenly.
- Step 5
- Top each with half of the raspberry mixture. Drizzle about 1 tsp (5mL) of the honey mixture over the raspberries on each cheese wheel.
- Step 6
- Place plank on barbecue grill and close lid. Cook for 15 to 20 minutes until cheese is golden brown and slightly puffed. Remove from grill placing plank on a heat proof serving dish. Drizzle remaining honey mixture over raspberries on each cheese wheel. Serve with your favourite crackers, sliced baguettes or pitas.
