Method
- Step 1
- Pre-heat your oven to 350°F (180°C) and line a roasting pan with parchment paper.
- Step 2
- In a mixing bowl combine all ingredients, reserving 2 tbsp (30 mL) of the barbecue sauce, mixing gently by hand until the ingredients are well blended. Shape into a loaf/log shape in the roasting pan. Dip you hand in cold water and smooth the surface of the meatloaf, this will help prevent deep cracks form forming.
- Step 3
- Season the loaf lightly and brush the top of the loaf evenly with the remaining sauce. Bake the meatloaf for approximately one hour, until cooked through to 170°F (77°C). Remove from the oven and let rest for 15 minutes before serving.
