Uncooked Colossal Freshwater Shrimp (8-12), thawed and peeled
Honey or granulated sugar
Preheat barbecue to high heat and lightly oil grill. Pat shrimp dry using a paper towel.
Finely grate lime, measure 1 tsp (5 mL) zest; stir into melted butter. Halve the lime and squeeze 1 tbsp (15 mL) juice into butter mixture along with honey, hot sauce and garlic. Divide mixture in half.
Toss shrimp with half the butter mixture and pepper. Grill until shrimp are firm and opaque, about 2 minutes per side. Brush with remaining butter mixture before serving.
