Grilled Fruit & Pound Cake

  1. 2 peaches (not too ripe), thickly sliced
  2. 2 pears, thickly sliced
  3. 2 black plums, thickly sliced
  4. ½ cup halved strawberries
  5. 3 tbsp brown sugar
  6. 1 tbsp finely chopped fresh ginger
  7. 4 slices vanilla pound cake
  8. ½ cup vanilla yogourt


  1. Preheat barbecue to medium-high. In a bowl, stir together peaches, pears, plums, strawberries, brown sugar and ginger.
  2. Place a large sheet of double-thickness foil, greased, on grill. Lay fruit on top and cook, uncovered, for about 5 min. on each side, or until fruit is lightly caramelized. Remove from heat and set aside.
  3. Place cake slices directly on grill rack and grill for about 1 min. on each side. Divide cake slices among 4 plates. Top with grilled fruit and vanilla yogurt.

Replace the brown sugar with 2 tbsp (30 mL) maple syrup.
