Golden Delicious or Jonagold apples, peeled and chopped (about 5 cups/1.25 L)
firmly packed brown sugar
melted coconut oil
Preheat oven to 350°F (180°C). In bowl, toss apples with cornstarch, maple syrup, lemon zest, lemon juice and vanilla. Divide among 4 (1-cup/250-mL) ramekins.
In another bowl, stir together brown sugar, ground almonds, slivered almonds and coconut oil; sprinkle evenly over apples. Bake 30 to 35 min. until apples are soft and juices bubbling. Serve warm with dollops of whipped cream or vanilla ice cream.
