Crunchy Chocolate and Berry Yogourt Cups

Ingredients

  1. 2 tbsp (30 mL) cocoa powder
  2. 2 tbsp (30 mL) water
  3. 1 1/2 cups (375 mL) vanilla yogurt
  4. 1/2 cup (125 mL) flax & fibre granola
  5. 2 cups (500 mL) mixed fresh berries such as raspberries, blueberries and blackberries
  6. 2 cups (500 mL) mixed fresh berries such as raspberries, blueberries and blackberries

Method

  1. Dissolve cocoa by whisking into water. Fold cocoa mixture into vanilla yogurt. 
  2. Divide half the granola, half the yogourt and half the berries among 4 parfait or tumbler-style glasses. Repeat the three layers using up remaining granola, yogourt and berries. Add mint leaves, if using.
