In glass pitcher combine 1 cup (250 mL) carbonated mineral water, carrots, celery, cherry tomatoes and cucumbers. Infuse by chilling for 30 minutes.
To serve, add remaining mineral water to pitcher with lemon juice. Use wooden spoon to lightly crush vegetables to release flavours. Add 1 cup (250 mL) ice. Pour into glasses and add celery stalk with leaves for garnish.
