Spicy Orange Shrimp Cocktail

  1. 2 cups (500 mL) 100% Pure & Natural Orange Juice No Pulp
  2. 2 tsp (10 mL) hot pepper flakes
  3. 2 cloves garlic, halved
  4. 1/2 tsp (2 mL) each salt and pepper
  5. 1 bag (454 g) Uncooked Colossal Freshwater Shrimp (8/10)
  6. 1 ripe avocado, peeled and pit removed, diced
  7. 3 tbsp (45 mL) finely chopped red onion
  8. 2 tbsp (30 mL) chopped fresh cilantro
  9. salt and pepper, to taste


  1. Place orange juice, hot pepper flakes, garlic, salt and pepper in a medium saucepan. Bring to a boil; reduce heat to a very gentle simmer. Meanwhile, peel shrimp, leaving tails attached. Immerse shrimp in orange juice mixture and poach for 3 to 4 min. or until shrimp are just opaque. Do not overcook.
  2. Use a slotted spoon to remove shrimp, and drain on a paper-towel-lined plate. Refrigerate. Reserve 3 tbsp (45 mL) of poaching liquid, removing garlic pieces, and cool.
  3. Combine avocado with cooled poaching liquid, red onion and cilantro; season with additional salt and pepper to taste. Divide avocado mixture and shrimp among four plates or glasses and serve.
