Brie & Blueberry Grilled Cheese Sandwich

  1. 8 slices walnut bread (or other bread with nuts or seeds)
  2. 1 tbsp (15 mL) softened butter
  3. 4 tsp (20 mL) honey
  4. 5 oz (150 g) brie cheese, thinly sliced
  5. ½ cup (125 mL) fresh or frozen blueberries(thawed and drained if frozen), roughly chopped


  1. Butter one side of each bread slice, evenly dividing 1 tbsp (15 mL). Place slices – buttered sides down – on clean work surface. Spread 4 of the slices (on unbuttered sides) with 1 tsp (5 mL) honey each. 
  2. Divide the brie slices among the 4 honeyed slices, and top with 2 tbsp (30 mL) blueberries each. Place remaining bread slices on top, buttered side out. 
  3. Brown sandwiches in a non-stick skillet over medium-low heat for about 10 min., turning once, or until cheese is melted and bread is golden on both sides.
