Ingredients
- 2 1/2 -3 pound
- whole chicken, cut into parts; ask the butcher to remove the backbone of the chicken if needed
- Olive oil, for brushing
- Salt and cracked black pepper
- 1/4 cup
- Compliments Whole Roasted Almonds no salt added
- 1/2 cup
- Compliments Organic Mint Leaves, chopped
- 2
- cloves garlic, crushed
- 1 tsp
- powdered sugar
- 1/4 cup
- lemon juice
- 1/2 cup
- olive oil
- 1 package
- Compliments Organic Baby Spinach Leaves
- 5 oz
Method
- Step 1
- Preheat oven to 425°F.
- Step 2
- Using kitchen scissors, cut along the backbone of the chicken, then press firmly on the breastbone to flatten it.
- Step 3
- Place the chicken in a baking dish lined with nonstick baking paper.
- Step 4
- Brush with olive oil and sprinkle with salt and pepper.
- Step 5
- Roast for 30 minutes or until cooked through and golden.
- Step 6
- Place the almonds, mint, garlic, sugar, lemon juice, olive oil, salt and pepper in a bowl and stir to combine.
- Step 7
- Serve the chicken with the almond mint sauce over spinach.
