Preheat oven to 450°F. In a 12-inch nonstick frying pan over high heat, combine turkey, salt, and pepper to taste.
Stir often until turkey is no longer pink, about 4 minutes.
Spoon turkey and pan juices into the bowl of a food processor.
Add ricotta and 2/3 cup Alfredo sauce.
Blend until smooth. Lay an egg roll wrapper out on work surface.
Spoon 1/8 of the turkey mixture in a line across the wrapper.
Roll dough up to enclose filling, leaving ends open.
Repeat to use remaining wrappers and filling.
Arrange cannelloni in a single layer on a lightly greased 9x12-inch baking dish.
Spoon vodka sauce over cannelloni, drizzle with remaining Alfredo sauce, and top with cheese.
Bake cannelloni until sauce and cheese are bubbling, 15-20 minutes.
To serve, use a spatula to ladle onto plates.
