- boneless skinless chicken thighs, cut into bite-sized pieces
- 3 tbsp
- Compliments Unbleached Flour
- 11/2 cups
- Safeway Compliments Broth
- 1 can
- Compliments Chick Peas, drained
- 15 ounces
- 1/4 cup
- minced fresh cilantro
- hot, steamed Sensations Jasmine Rice
- Long Grain Rice (optional)
Method
- Step 1
- Combine onion, oil, garlic, and curry powder in a 12-inch nonstick frying pan over medium high heat.
- Step 2
- Stir often until onion has softened and curry isslightly toasted and fragrant, 3-4 minutes.
- Step 3
- Add chicken to pan and cook,stirring often, until chicken is lightly browned, about 5 minutes.
- Step 4
- Sprinkle flour over chicken and stir to coat; cook 1 minute.
- Step 5
- Add broth gradually, stirring until smooth.
- Step 6
- Add chick peas.
- Step 7
- Bring mixture to a simmer, stirring often, and cook until liquid has thickened and chicken is no longer pink in center (cut to test), about 5 more minutes.
- Step 8
- Transfer curry to a serving bowl and sprinkle with cilantro. Offer with hot, steamed jasmine rice as an accompaniment if desired.
