Southwest Turkey Meatloaf

Ingredients

  1. 11/4 pounds ground turkey
  2. 2 Compliments Large Eggs, lightly beaten
  3. 3/4 cup plain bread crumbs
  4. 1/2 cup Sensations Corn and Black Bean Salsa
  5. salt and freshly ground pepper
  6. 3/4 cup shredded Cheddar Jack Cheese
  7. Lucerne® Sour Cream (optional)
  8. sliced avocado (optional)

Method

  1. Preheat oven to 425°F. 
  2. In a large bowl, combine turkey, eggs, bread crumbs, 1/2 cup salsa, the corn, and salt and pepper to taste. 
  3. Mix gently just until blended. 
  4. Transfer mixture to a baking pan and shape into a 9” x 5” loaf. 
  5. Sprinkle with cheese.
  6. Bake meatloaf until browned and a meat thermometer registers 160°F when inserted into center of loaf, about 30 minutes. 
  7. Remove from oven and let stand 5 minutes.
  8. To serve, slice meatloaf and offer additional salsa, sour cream, and avocado slices to add to taste.
