Pan Seared Halibut with Cherry Tomatoes

  1. 2 (12 ounces each) Halibut, if frozen thaw according to package directions
  2. salt and freshly ground pepper
  3. 3 tablespoons Sensations Extra Virgin 100% Olive Oil
  4. 10-12 ounces cherry tomatoes (use a mixture of colours or all one colour as desired)


  1. Pat halibut steaks dry with a paper towel. 
  2. Season to taste with salt and pepper. 
  3. Heat 2 tablespoons oil in a 12 or 14-inch nonstick frying pan over high heat. 
  4. When pan is hot, add fish and cook until undersides are browned, about 4 minutes. 
  5. Using a spatula, carefully turn fish over and cook until other side is brown and fish is no longer translucent in center (cut to test), about 3 more minutes. 
  6. Gently transfer fish to a serving platter and keep warm.
  7. To pan add remaining oil and tomatoes. 
  8. Stir or shake over high heat just until tomatoes begin to soften and exude juice, 1-2 minutes.
  9. Pour tomatoes and pan juices over halibut and serve immediately.
