Ingredients

- spinach, washed, stems removed
- 170 g
- 1 cup
- 10% half & half cream
- 250 mL
- 1 cup
- crumbled soft goat cheese
- 250 mL /125 g
- 1
- clove garlic, finely chopped
- 1/4 tsp
- nutmeg
- 1 mL
- salt and pepper to taste
- 1/2 cup
- grated Gouda (optional)
- 125 mL
Method
- Step 1
- In large saucepan, cook pasta according to package instructions. Stir in spinach in last min of cooking. Drain and reserve pasta and spinach in saucepan.
- Step 2
- In another saucepan, bring cream to a simmer over medium-high heat. Stir in goat cheese, garlic and nutmeg until goat cheese is melted.
- Step 3
- Pour goat cheese mixture onto reserved pasta and spinach. Toss to coat with sauce. Season with salt and pepper. Divide into 4 serving bowls. Sprinkle with grated Gouda, if desired. Serve immediately.
