Fresh Peach Bellini

  1. 8 ripe peaches
  2. 1 lime, juiced
  3. 1 lime, juiced
  4. 8 mint sprigs for garnish


  1. Peel, pit and cut peaches in half. Cut one peach-half into 8 slices; set aside. Roughly chop remaining peaches. 
  2. Place chopped peaches and lime juice into food processor; purée until smooth. Strain purée for smoother texture, if desired.
  3. Divide purée into 8 chilled cocktail glasses; top up with ginger ale. Garnish with mint sprigs and peach slices.

Tip: Add a splash of peach schnapps to give the drink a sweeter finish.
