Chili Corn Chowder with Bacon

  1. 1/2 pound Compliments Regular Sliced Bacon
  2. 2 cups Compliments Peaches and Cream Corn
  3. 1 large onion, chopped
  4. 1 teaspoon minced Compliments Organic Thyme
  5. salt and freshly ground pepper
  6. 2 tablespoons Compliments Unbleached Flour
  7. 3 cups Compliments Beef Broth
  8. 3 tablespoons mild green Chilies, diced
  9. 1 cup Lucerne® Half and Half


  1. In a deep, 12 to 14-inch sauté pan, combine bacon, corn, onion, thyme, and salt and pepper to taste over medium high heat. Stir often until bacon and vegetables are golden brown, 12-15 minutes.
  2. Sprinkle flour over bacon and vegetables. Stir often over the heat for 2 minutes. Slowly stir in 1 cup of broth until mixture simmers and thickens, about 2 minutes. 
  3. Add remaining broth and chilies and stir often until simmering. Gently whisk in half and half. Stir just until hot.
  4. Ladle soup into bowls and serve immediately.

Healthier Alternative: For a leaner version, use Lucerne® Fat Free Coffee Creamer instead of regular.
