Ingredients

  • 1 package (about 3 pounds) Compliments Balance Boneless Skinless Chicken Breasts
  • 6 large or 12 smaller Compliments Organic Fresh Basil Leaves
  • 1/4 pound Compliments Monterey Jack Cheese, cut into 6 equal pieces
  • 6 wooden or metal skewers
  • 1 tablespoon Sensations Extra Virgin 100% Olive Oil
  • 6 slices Compliments Regular Sliced Bacon
  • Salt and freshly ground pepper

Method

  1. Prepare a gas or charcoal barbecue for medium-high heat. 
  2. While barbecue heats,place a chicken breast between 2 sheets of plastic wrap. 
  3. With a smooth meat mallet, pound chicken until it is 1/4 inch thick. 
  4. Repeat to pound all chicken.
  5. Arrange 1 or 2 basil leaves in the center of each pounded chicken breast. 
  6. Place a piece of cheese on top of basil. 
  7. Fold sides of chicken up and over basil and cheese to enclose tightly and completely. 
  8. Secure tightly with skewers. 
  9. Brush chicken bundles with oil and season to taste with salt and pepper. 
  10. Tightly wrap 1 strip of bacon around each bundle, securing it with skewers if necessary.
  11. Place bundles on grill over heat. Cover and cook until undersides are browned, 5-7 minutes. 
  12. Turn bundles and cook to brown other sides, about 5 more minutes.
  13. Continue cooking, turning once or twice more, until chicken is well browned and nolonger pink in center (carefully cut to test so that melted cheese does not run out),5-10 more minutes. 
  14. Transfer to a serving platter. Remove skewers and serve.

Healthier Alternative:

Substitute Compliments Smoked Bacon 34% less salt if you’re concerned about your salt intake, or use turkey bacon for a lower fat choice.
