olive oil plus extra 1/2 tablespoon
Compliments Balance Chicken Breast Fillets
salted capers, rinsed and drained
red pepper chili flakes
lemon rind, finely grated
cloves garlic, sliced
parsley leaves, chopped
Lemon wedges, to serve
ounces Compliments Organic baby spinach, to serve
Cracked Black Pepper
Heat 11/2 tablespoons of the oil in a frying pan over medium heat.
Sprinkle the chicken with the pepper.
Cook for 5 minutes on each side or until browned.
Add the remaining oil, capers, chili flakes, lemon rind and garlic, and cook for 1 minute.
Add lemon juice and parsley.
Serve on 4 plates with spinach and lemon wedges.
