Ingredients

1 cup
instant long grain brown rice
250 mL
1/4 cup
finely chopped dried apricots
60 mL
1/4 cup
finely chopped red onion
60 mL
1/4 cup
fresh orange juice
60 mL
2 tbsp
olive oil
30 mL
2 tbsp
white wine vinegar
30 mL
2 tsp
yellow curry paste
10 mL
1/4 cup
fresh cilantro, chopped
60 mL
1/4 cup
sliced almonds
60 mL

Method

Step 1
Cook rice according to package directions. Fluff with fork and toss with apricots and red onion.
Step 2
In a small bowl, whisk together orange juice, oil, vinegar and curry paste. Pour over rice mixture and gently toss. Let cool completely and then sprinkle cilantro and almonds overtop.
