Ingredients

yellow peppers, seeded and quartered

medium zucchini, sliced lengthwise
2 tbsp
olive oil

spicy Italian sausages

spaghettini
375 g
1 can
tomato paste
156 mL
juice of 1 lime

garlic cloves
1 cup
coarsely chopped arugula
250 mL
3/4 cup
grated Cheddar
175 mL

Method

Step 1
In bowl, toss peppers and zucchini with oil. Place veggies and sausages on barbecue preheated to high; grill until veggies are tender and lightly charred. Cook sausages until browned and cooked through; about 10 min.
Step 2
Meanwhile, cook spaghettini according to package instructions. Reserve 1/2 cup (125 mL) cooking water; drain pasta.
Step 3
Mix tomato paste, lime juice and garlic. Add to hot pasta and toss to coat.
Step 4
Slice sausages and coarsely chop grilled vegetables. Set on platter with pasta. Scatter arugula and cheese on top.
