- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Place salmon fillets on parchment. Drizzle fish with lemon juice and oil; season with salt, pepper and Cajun spice. Bake 12 to 15 min., or until just cooked through.

To assemble, spread buns with mayonnaise and fill salmon fillets, lettuce, tomato, cucumber, onion and red pepper. Close buns to serve.
Tip: Instead of salmon, try halibut or snapper fillets. Use tartar sauce instead of mayonnaise.
