Ingredients

  • 1 small onion, finely chopped
  • 2 tablespoons Sensations Extra Virgin 100% Olive Oil
  • 11/2 cups Sensations Calrose Rice
  • 5 cups Compliments Chicken Broth
  • 1/2 cup dry white wine
  • 1 cup Sensations Shredded Italian Cheese Blend
  • 8 ounces flake-style imitation crabmeat (surimi), flaked
  • 2-3 tablespoons minced Compliments Organic Fresh Chives
  • Salt to taste

Method

  1. In a deep, 12-inch sauté pan or a 5 to 6-quart pan combine onion and olive oil over medium-high heat. 
  2. Stir often until onion is softened but not browned, 3-4 minutes. 
  3. Add rice and stir often until grains are translucent, 1-2 minutes.
  4. Add about 2 cups of broth and the wine to pan. Bring to a simmer and stir occasionally until liquid is mostly absorbed, about 5 minutes.
  5. Add another 2 cups broth and continue simmering, stirring occasionally, until liquid is absorbed again, about 5 minutes. 
  6. Add remaining broth and repeat until broth is mostly absorbed and rice is tender-firm to bite and creamy, 4-6 minutes.
  7. Remove pan from heat and stir in cheese until melted. 
  8. Stir in crab meat and chives. 
  9. Spoon into serving bowls and serve immediately.
